Oven Temperature Across Systems

Three oven temperature systems: °F (American), °C (most international), and Gas Mark (older British). Conversion formulas: °C = (°F - 32) × 5/9. Gas Mark to °C: each Mark step is roughly 10-25 °C. Most modern UK ovens display °C; older models still show Gas Marks. American ovens display °F.

Common cooking ranges: 'low' = 130-150 °C / 250-300 °F / Gas 1-2; 'moderate' = 160-180 °C / 325-350 °F / Gas 3-4; 'moderately hot' = 190-200 °C / 375-400 °F / Gas 5-6; 'hot' = 220-230 °C / 425-450 °F / Gas 7-8; 'very hot' = 240+ °C / 475+ °F / Gas 9+. Bread baking: typically 220-230 °C / 425-450 °F / Gas 7-8.

Frequently Asked Questions

Should I reduce temperature for fan oven?

Yes - reduce by 20 °C (or 1 Gas Mark) from the recipe's stated temperature. A recipe for 200 °C in a conventional oven becomes 180 °C in a fan/convection oven. Fan ovens cook faster too - reduce time by 5-10 minutes for longer recipes.

Why doesn't my baking turn out at the recipe temperature?

Oven calibration drift. Many home ovens are 10-30 °F off from their displayed temperature. Get an oven thermometer (£10) to check. Recalibrate by adjusting recipe temperature up or down by the offset, or have the oven's thermostat re-tuned by a service technician.
