When a US recipe calls for '1 stick of butter,' substitute 113 g (or roughly 100-115 g for non-precision baking). 2 sticks = 226 g, close to a UK 250 g block (within 10%). 4 sticks = 453 g = 1 lb. The difference between 113 g (1 US stick) and 125 g (a UK quarter-block) is small enough that most baking recipes survive the swap.
